I confess. I am a chip addict. There is
something about chips that I just can’t resist. But they haven’t exactly got
the world’s best reputation have they?
So meet my healthier alternative; the
sweet potato chip.
Of course, chips are never going to be
truly healthy, but sweet potatoes have more fibre and vitamin A than white potatoes
and also have a lower GI value, making them a better alternative the white
potato. Plus making them yourself means you can control exactly what goes into
them.
Also they just taste so damn good.
You will need (serves 2-3):
- 2 medium sized sweet potatoes
- 1 Table spoon olive oil
- Salt
- Chilli Powder
- Cumin
Pre heat your oven to gas mark 6 and
line a baking tray with grease proof paper.
First wash and scrub your potatoes, then
I leave the skin on, for that skin on fries taste, but you can peel it off if
you prefer.
Next, cut your potatoes into 1 cm chips,
about 5 cm in length.
In a pan of boiling water, boil for
around 10 minutes or until soft but not thoroughly cooked.
Once drained, dry off with some kitchen
towel.
Place into a bowl with the oil and the
salt and spices and very gently stir to coat each chip with the flavours.
Then place onto the baking tray, and put in the oven for 45 minutes until crispy and golden brown, turning over, half way through.
For that extra crisp char, I put mine
under the grill, to make them extra fry like.
Serve with a good steak, burger or just
some sweet chilli dipping sauce. TGI’s fries, I’m coming for you!


Sweet potato chips are possibly one of my favourite, favourite foods ever. They're so yummy. Now you've got me craving them- might have to put sweet potato on the shopping list for later this week now!
