Move over hummus there is a new kid in
town, and he goes by the name of Root. Beetroot.
I am such a huge fan of hummus, I just
slather in on anything I can get my hands on. Wraps, crackers, carrots, hell
even just on the side of my plate of chips, I just love the stuff! However I think I may have slightly over
done it, and well frankly, I’m little sick of the stuff. So I needed a new fix, a quick grab out of
the fridge, now fuss dip.
While I was on holiday, and was in a restaurant,
I saw Beetroot and Orange salad on the menu sadly I didn’t try it as I was
lured away by the steak (sorry but steak vs salad for dinner? Yeah such a tough
decision). However the flavour combo stuck with me, so of course I had to try
it, and boy am I glad I did! And so will you now.
To make you will need:
- 4 ready cooked beetroots
- 3 tbsp crème fraîche
- 1 tbsp Greek yogurt
- 1 orange
- 1 tbsp olive oil
- 1 garlic clove
- ½ tsp dried mint
First, dice the beetroot into smaller
chunks, 8th’s will be fine, and put into a blender.
Then roll the orange on a hard surface, peel
and squeeze out the juice into the blender.
Then add all the rest of the ingredients
and give it a good whiz. Serve.
One of the most simple snacks you could possibly make, and perfect for all those lazy summer picnics I hope your having.

ReplyDeleteI know, I was so pleased at the colour, I was worried that with the yogurt it might go slightly pale pink, but no beetroot is just so vivid. I had a few friends over, and the colour just draws people in! xx
