White Chocolate, Walnut and Ginger Rocky Road

I don’t know about you, but growing up rocky road was one of the ‘baking’ recipes we did a lot of. At primary school, at holiday clubs etc precisely because it required not baking and let’s be honest you can’t mess it up really. Trust me when I say I’ve seen the face of a small child when their cake has failed to rise. Avoid at all cost.

So when I just needed a chocolate fix, I didn’t want to be messing around with measurements and quantities. I needed instant, no messing results. Hence the rocky road. However I still didn’t want any old rocky road, so out came my white chocolate, walnut and ginger rocky road.

For this recipe you will need
  • 450 grams of white chocolate
  • 50grams marshmallows
  • 50 grams cranberries
  • 100g ginger nut biscuits
  • 50g Walnuts
  • 2 teaspoons ground ginger
  • (However technically quantities are not really an issue. Fancy more walnuts, go for it. Less marshmallows, why not? That’s the beauty!)

First, break up and crush your biscuits into small rough chunks. Hold your fork/ knife/ weapon of choice and smash away. Just imagine it’s your worst enemy, it’s rather quite therapeutic.

Cut your marshmallows into quarters and if your walnuts are whole, break into smaller pieces also.

In a greaseproof paper lined dish, add all the ingredients except the chocolate and ground ginger, spreading out evenly.

Now melt your white chocolate, stirring the ground ginger in once melted.

Quickly pour all over your dry ingredients, and using the back of a knife, spread out. This doesn’t have to be neat; it is a ‘rocky road’ after all.

Once satisfied, place into the fridge until set. Then cut into sizeable slices.

I’ll tell you a little story. I went to see Monsters University on Tuesday (Was quite disappointed actually- I think maybe it’s just because Monsters Inc is such a cult classic) anyways, instead of forking out for popcorn, I popped a couple of this bars in my bag, and munched happily away in the cinema with rocky road. So naughty!

Anyway also I’m off to V festival tomorrow; I am so excited, but I will have not internet access from tomorrow till Monday. How on earth will I survive!
